OUR STORY
Oleum is a Lebanese trading company that is the owner of Olivarès, a premium Extra Virgin Olive Oil brand. The oil is produced and bottled by Nicolas Fares & Sons, the sister company (Olive Press since 1933) located in Lebaa, Jezzine, in the southern region of Lebanon.
For nearly 90 years and since 1933, every autumn, more than 200 olive growers have been making a pilgrimage to the historic olive oil press of Nicolas Fares and Sons in Lebaa.
The finest Baladi olives are carefully handpicked, pressed, and bottled to create this exceptional Extra Virgin Olive Oil, cultivated on rain-fed lands in the southern region of Lebanon.
We take pride in controlling every step of the supply chain - from the olive orchard to oil storage and bottling.
Our commitment to quality is reflected in our use of the latest technology in olive milling, with two fully automated machines that guarantee superior results in terms of both olive oil quality and quantity.
Moreover, we are constantly updating our knowledge and skills to stay abreast of the latest techniques in the olive oil industry. We undergo regular training to ensure that we are always up-to-date with the newest practices and innovations.
SUSTAINABLE
& ECO- FRIENDLY
Residues from pressing the olives are re-used in an eco-friendly way. The solid waste which is the husk or residue from pressed olives is recycled, and compacted into husk bricks that will be used as fuel, in particular for heating houses in the winter. This will help decrease deforestation.

Nicolas Fares and Sons Mill and the USAID-funded Lebanon Industry Value Chain Development Project - LIVCD project co-invested in a program that will benefit at least 140 olive oil producers from the region, who will have access to the olive mill at a reasonable cost. The project also helps improve the quality and quantity of the oil produced.

Our passion for olive oil began from the country we were born in LEBANON, and specifically Lebaa - Jezzine where we fell in love with the rich, bold flavors of the locally grown olives.
Right there, we knew we had to share this culinary treasure with the world.
At Olivarès, we believe that the key to producing exceptional olive oil lies in the details. From selecting the finest olives to using state-of-the-art equipment and carefully monitoring the extraction process, we go to great lengths to ensure the quality and purity of our product.
Olivarès is an Extra Virgin Olive Oil cold-pressed from olives (no additives, no preservatives). This product is unfiltered to preserve the color and texture of the oil. It is stored in a cool and dark environment in stainless steel tanks.
Olivarès targets female and male audience of middle and high social class. The brand is positioned as a high end product and is currently sold in class A gourmet shops in the Lebanese and UAE markets.
